For a lot of people the best answer is: "Nothing at all". After all, when you're on vacation from you normal life, reading a book while swinging in a hammock or sipping a beer on the beach as you watch the surfers is a whole lot better than trying to keep a hectic schedule of sight-seeing and shopping.
Nonetheless, there is a wide variety of activities here when you've decided to leave the hammock for a while:

Step out into the ocean and learn to fish like the locals do, with your line coiled around an old Coca-Cola bottle. (WE fish this way, and catch our share!) For more traditional fishermen and women, hire a boat to take you to prime fishing spots in and beyond the bay.

There's great snorkeling here, just off the beach a little ways East from town. You can also go out the Marietas Islands by boat, about a half-hour trip, where there are many, many more great snorkeling spots. You're likely to see dolphins or whales on your trip as well!

Surfing is a skill you've probably want to pick up since forever, and you can learn to surf on long boards in surf perfect for learning. Once you've mastered it, there are bigger waves up and down the coast. We have boogie boards for fun-on-your-belly wave- riding as well!
Punta de Mita has several points for surfing. The “Anclote” (just 10 minutes walking) is ideal for beginners. Walking a little further to the north you will find “El Faro” which has more attractive waves for more experience surfers. If you decide to walk to the south on the beach, after 40 minutes you will find “La Lancha” which seems to be one of the favorite points for surfing.
